Baked Paneer Cutlets

BAKED PANEER CUTLETS

I
ngredients
  • 250 gms mashed paneer
  • 4 green chillies,finely chopped
  • 2tbsp coriander leaves,finely chopped
  • 3/4 tsp pepper powder
  • 1 tbsp corn flour
  • Oil for brushing
  • Salt to taste
Method of Preparation
  • Mix the paneer, green chillies, coriander leaves, salt and pepper
  • Mix well. Add the corn flour. Mix and shape into cutlet.
  • Pre-heat the microwave on the "convection" at 250 degree c
  • Brush the cutlets with a little oil. Place on a lightly greased tray ,placed on the grilling rack. Bake at 250 degree C for 18-25 min. Turn the cutlets over half way through grilling time, and grill till golden brown on all sides.
  • Your cutlet is ready to serve hot

Lime Mint Cooler

Lime Mint Cooler

Now it's time for a refreshing drink. Lemon and Mint are always sources of cooling. So let's try a lemon and mint punch

Ingredients
  • One Lemon
  • mint Leaves - 1 Cup
  • Sugar as per taste Or optionally jal jira powder
  • Cold water
Method of Preparation
  • Extract lemon juice and mix cold water
  • Make a fine paste of the mint leaves and extract the juice
  • Mix the mint extract with the lemon juice and add sugar to taste
  • Optionally instead of sugar you can also jal jira powder to give that true mint punch

Mushroom Mo-Mo

Mushroom Mo-Mo

Ingredients

FOR MO-MO
  • Rice flour
  • Salt
  • Oil
  • Hot water
FOR STUFFING
  • Button Mushroom- 1 packet
  • Chilly powder- 2 tbsp
  • Pepper powder- 1 tbsp
  • Salt to taste
  • Oil
  • Water
  • Aniseed - 1/2 tbsp
  • Onions finely chopped
  • green chilly finely chopped
  • Chinese Salt - one pinch
  • Garlic finely chopped
METHOD OF PREPARATION
  • Add oil in a pan (preferably olive oil) , once the oil gets heated up add aniseed, finely chopped garlic and green chilly.
  • Once the garlic gives out the flavor add finely chopped onions, once the onions get fried golden brown add fine;y chopped button mushrooms.
  • Add chilly powder, pepper powder and salt.
  • Stir the mixture and add water and close the pan with a lid.
  • Let the mushroom get cooked well and the water get dried out totally.
FOR THE MO MO MIXTURE
  • Add water to the rice flour and make a firm dough, let it not become watery
  • Add salt and some oil to the dough
  • Make a firm dough
  • Now make small balls with the dough
  • Roll the small ball shaped dough on a flat plate
  • Fill the stuffing in between and seal the ends with water
  • Now steam these stuffed mo-mo's in an idli maker
Now tasty mo-mo's are ready to be served with tomato sauce.



Hot and Steaming Corn

Nowadays anywhere and everywhere you walk through the streets of chennai you can find hot corn! Regular rs.25, medium rs.35 and large rs.45. Hmmm so what if we feel like having it every day . Not affordable to pocket right. Don worry it is really simple to make this recipe at home.

SIMPLE SALT

  • Steam Corn in microwave on high power for ten minutes or steam it in a pressure cooker for five whistles. Steaming is up to ones individual wish . Corn usually takes only less time to cook.
  • Put the steaming corn in a bowl add salt and pepper.
CHAAT SPECIAL
  • Take steaming corn in a bowl , add salt, lemon juice - 5-8 drops, chat masala
CHINESE SPECIAL
  • Take steaming corn in a bowl, add salt, chilly flakes, tomato sauce and a pinch of chinese salt.

Mushroom delight

MUSHROOM DELIGHT [V]

Cooking Experience: Requires basic experience in cooking usually recommended for good cooks though not experts

Ingredients
  • Mushroom - 1 pkt
  • Cream - 1 cup
  • Cashew Nuts- 1 Cup (soaked in water)
  • Spring Onions
  • garlic finely chopped
  • onion finely chopped
  • aniseed(sombu)- 1 tea spoon
  • red chilly powder (Kashmiri chilli preferably)- 2 table spoons
  • white pepper powder- 1 table spoon
  • salt to taste
  • oil or ghee
This is a party dish, quite rich.

Method of Preparation
  • Heat oil/ghee in a wok for 2 minutes
  • Add the aniseeds & finely chopped garlic
  • Stir for two minutes until the garlic gives out its aroma
  • Add the finely chopped onions and fry until golden brown
  • Add the mushrooms & stir well
  • Grind the soaked cashew nuts to a fine paste
  • Add the cream and cashew nut paste into the wok and let the mushroom get cooked in low flame for about five minutes. If your mixture seems quite dry in the wok beware to add a little water
  • Now add the chilly powder ,white pepper and salt to taste and let it cook for another ten minutes in low flame
  • now add a part of the finely chopped spring onions to it
Method of Presentation
  • Transfer the contents from the wok into a serving bowl
  • Add finely chopped spring onions
  • Place a spoon of whipped cream in the center
  • sprinkle fried cashew nuts
  • serve hot with chappati/roti/pulka/rice

Cooking A Gift !!

Classic Cooking is a talent, a gift bestowed by god on few people alone. My strong passion for cooking has given me the drive for this new blog. This will be a place where classic ends of multi cuisine converge.
to begin with my first recipe is a sweet ...it s an exemplary Indian sweet

RASA MALAI

Ingredients
  • 1 ½ cup sugar
  • 1 ½ litre milk
  • 1-cup milk powder
  • 1 ½ tbsp baking powder
  • 1 egg(Optional)
  • 1-cup cream
  • a few almonds,Cashew Nuts,Pista,saffron
Method of Preparation :
Boil milk, add sugar, and thicken to half the quantity. Keep it aside. Mix milk powder and baking powder. Break the egg on to this mixture (optional but when done can yield better softness...common guys cakes have egg too right? ), now knead the mixture lightly into the dough with wet hands, and make small balls, flatten the balls slightly with the palm of your hand. Now keep the thickened milk on slow fire and put the small balls into it. Let them cook for 10 minutes, remove and cool. Add beaten cream and sprinkle small pieces of almond,cashew nuts,Pista and saffron on top. Serve chilled.
